Thinking Out Loud – 3/31/2016

Happy Thursday! This week is going by way to fast for my taste! I had two days off of class because of Easter break and my track team is on spring break so we only have 3 practices this week (instead of 5 days of practice and 2 meets). It’s been really nice to have a slow week to be able to get things done at home but I know I’m in for a shock when things pick back up on Monday.

I’m checking in much later than usual today but I have a so many things floating around in my mind to share that I just had to jump at the opportunity for some Thinking Out Loud

1 – I keep getting e-mails from the BAA about the Boston Marathon (which is only 2.5 weeks away!). I thought I would be more bummed but my reason for not running this year is such a good one that I’m actually not phased in the slightest! And when I finally do run Boston again it will be even more special because I’ll have my own little cheerleader!

2 – The dogs have been acting up like crazy ever since we moved. I’m not sure what the problem is but they seem really on edge – it could be that there are a lot more dogs living near our new apartment or that the amount of foot traffic by our place is high but they are definitely on edge. The past few days I’ve made a point to take them for a walk or to the dog park once a day and it has greatly improved things! Dog park for the win!

3 – I’ve been having productivity problems at home recently… probably because there is still a bit of unpacking/organizing to do so it’s hard to focus on school work. So I’ve been hitting up my favorite local coffee shop for a decaf iced latte and some homework a few days a week. Let me tell you – I am more than ready for the semester to be done in 3 weeks!!

4 – I made a big pot of this Lemon Chicken & Orzo Soup by Good Life Eats last Saturday and I’ve gotten at least one meal a day out of it this week. It is the perfect spring-time soup – light, lemony and filling without being heavy, creamy or cheesy. It is definitely on my “make again” list.

5 – The next few months are going to be crazy with visitors, trips and just lots of to-dos! I have a lot of projects before the semester is over, 3 comprehensive finals, my parents are coming out for 2 weeks, I’m going home for two weeks and Henri and I are going on our babymoon! I can’t imagine how fast the time is going to fly and that Lavinia will be here with us before we know it!

6 – Speaking of our babymoon I forgot to mention where we are going!! Henri and I are going to be spending 9 days in… PARIS! We’ve both been before and seen most of the touristy places so I’m really looking forward to just relaxing and enjoying the city while exploring more of the “real” Paris. If you have any suggestions of what to do/see let me know! We are thinking of throwing a day trip or two into the mix too – if you know any good destinations I’d LOVE to hear them!

7 – I’m still eating leftovers of my Lemon-Blueberry French Toast Casserole from Easter brunch and it hits the stop every time! Anyone wanna come over for breakfast so I have an excuse to make it again??

Well – I think that’s all I have for now. I should probably go and use the rest of my coffee shop time to actually be “school productive”, haha 😉

Who is running Boston this year!? Drop your bib # in the comments if you are so I can live vicariously through you on race day!

What is your favorite spring time recipe? I need some new ideas to motivate myself to cook for just me.
