Cinnamon Oatmeal Pancakes with Mixed Berry Compote

Man oh man, DOMS (delayed onset muscle soreness) is a REAL thing! I was feeling great on Tuesday – just a little calf tightness – and even told my friend I was feeling awesome when she texted me and asked how I was feeling after my race. Welllllll…. I woke up yesterday tired and sore.

I got through my easy run, strides and post run power exercises (#1) by promising myself some cinnamon oatmeal pancakes when it was all said and done.

IMG_8012After my workout I stretched, foam rolled, started a pot of coffee and got to work in the kitchen. I’ve made these pancakes before but was looking for something a little fruity to put on top. I threw together a quick mixed berry compote which ended up being pretty great! 

I gobbled up a few pancakes piled high with compote and a cup of coffee. It definitely hit the spot!!!Pancakes 2The pancakes have just the right amount of sweetness – not too much, not to little. And the berries add a tartness that compliments the pancakes perfectly!

Pancakes 3If berry compote isn’t your thing they’re pretty darn good with just a drizzle of maple syrup. I also think that peanut butter and bananas would be a great topping!

Cinnamon Oatmeal Pancakes with Mixed Berry Compote

For Pancakes
  1. 1/2 cup all-purpose flour
  2. 1/2 cup whole wheat flour
  3. 1/2 cup old fashioned oats (pulsed a few times in the food processor)
  4. 1 TBSP brown sugar
  5. 1 TBSP white sugar
  6. 2 tsp baking powder
  7. 1/2 tsp salt
  8. 1 tsp cinnamon
  9. 1 cup milk
  10. 2 TBSP butter, melted
  11. 1 egg
For Mixed Berry Compote
  1. 1 cup mixed berries, frozen
  2. 2 TBSP water
  3. 2 TBSP maple syrup
  4. 1/4 tsp cinnamon
For Pancakes
  1. In a medium mixing bowl whisk together all the dry ingredients (all-purpose flour through cinnamon).
  2. In a small mixing bowl whisk together the milk, butter and eggs.
  3. Pour the wet ingredients into the dry ingredients and mix together just until combined.
  4. Cook pancakes on a griddle, flipping once bubbles form on the top of the pancake and cooking for 1-2 minutes more.
For Mixed Berry Compote
  1. Stir together all ingredients in a small saucepan and cook over medium-high heat for 10 minutes. Stirring occasionally.
