Ranger Cookie Recipe

5 days until Christmas! 3 days until we fly home! 2 days until we celebrate with Henri’s family! And only 1 day until the Christmas Party and Cookies swap that we are hosting! Christmas is SO CLOSE!

On Wednesday I didn’t have work so I planned to bake all the cookies for the party that day.  It just so happened that I had perfect timing because Wednesday was also National Bake Cookies Day! How fitting!?

So after an early morning run I spent the majority of the day baking cookies – while switching off between listening to Christmas music and my current book on tape (The White Princess by Phillipa Gregory).

I made my personal favorite, Aunt Emma’s Christmas Cookies…

Ranger Cookies

Ranger Cookies are a favorite in my family – no one is quite sure where the recipe came from but we’ve made them every year since I can remember! They have a lot more “healthy” things in them than your average cookie which enables my mom to justify eating them for breakfast with her coffee (I mean there’s oatmeal and cornflakes in there so it’s basically like eating a bowl of cereal right?).

They can be baked so that they are either chewy or crunchy, just depends on the time, but I like them on the crunchy side. After Henri got me into dipping my cookies in milk these are my favorite cookie-milk combination!

These are so good I can’t not share the recipe! (My sister-in-law asked me for the recipe for a cookie competition at her office so I know its not just me that loves them!) Please make these – you will be happy you did!

Ingredients
  1. 1 cup butter, softened
  2. 1 cup brown sugar
  3. 1 cup granulated sugar
  4. 2 eggs
  5. 1 tsp vanilla
  6. 2 cups flour
  7. 1/2 tsp baking powder
  8. 1/2 tsp salt
  9. 1 tsp baking soda
  10. 2 cups cornflakes
  11. 2 cups oatmeal
  12. 1 cup coconut
  13. 12 ounces chocolate chips (or Holiday M&Ms at Christmas time)
Instructions
  1. In the bowl of a stand mixer, cream together butter and both sugars.
  2. Add eggs and vanilla extract and mix until well combined.
  3. In a separate bowl, mix together flour, baking powder, salt, and baking soda.
  4. Slowly add flour mixture to butter mixture and mix until well combined.
  5. Mix cornflakes, oatmeal, coconut and chocolate chips into cookies dough with a wooden spoon or using your hands.
  6. Roll dough into 1-inch diameter balls and bake 2 inches apart at 350 degrees for 12-15 minutes.
