Sweet Potato Chips + Healthy Onion Dip

This chip + dip combo is a delicious and healthy substitution for the old classic and would be the star of any party or gathering.

Every family has their go-to meals and snacks for family gatherings + parties. When Henri and I started dating and I joined in on their family get togethers I quickly realized that potato chips and onion dip was one of their must-haves for any family occasion. My family has always been a cheese + cracker family so this was new to me, but I was quick to jump on the potato chip + onion dip bandwagon.

I was craving this combo randomly the other day and while I love the classic (Ruffles + dip made by mixing onion soup mix into sour cream) I thought there had to be a way to fulfill my craving in a slightly more healthy fashion. I set out on a mission to make some homemade sweet potato chips and healthified onion dip and to my surprise and delight I was successful! I’m sure Henri was pleased as well because it probably would have been him making the run to the grocery store to grab chips + sour cream if my experiment hadn’t worked out. ha

The trick to the chips is to slice the potatoes very thin. I busted out our mandolin and used the 1/8th inch setting to cut the potatoes in the perfect thickness. I used coconut oil to fry the chips because I thought that the light flavor of coconut oil would compliment the sweet potatoes and because it is perfect for frying due to it’s high smoke point and that fact that it is stable even at high temperatures.

I fried up the potatoes in small batches, drained them on paper towels and sprinkled them with salt immediately. I could have eaten the entire batch of chips they were so tasty! They do have a slight hint of coconut but even Henri (who hates coconut everything) liked them.

This dip is my favorite and I don’t think I’ll make onion dip any other way from now on. Instead of the classic sour cream I used plain, whole milk Greek yogurt and you can’t even tell one bit that it’s not sour cream. Making the dip with sour cream reduces the calories and fat by more than 50% and more than doubles the amount of protein. Add in the fact that you avoid the chemicals and preservatives that are no doubt in those soup mixes and you have a win-win -> tastes great and better for you!

Oh, all this talk about this snack makes me want to make a whole other batch right now! Soooo good!
