Lemon-Blueberry French Toast Casserole & Training Summary: 3/21/2016-3/27/2016

Happy Monday y’all! 

I hope that you had an enjoyable Easter. Mine was pretty low-key – Henri’s family and I enjoyed an early Easter brunch before church and then spent the rest of the afternoon lounging around and enjoying each other’s company. IMG_2862

When I posted this picture of my plate at brunch on Instagram I got a text from my mom requesting the recipe for the Lemon-Blueberry French Toast Casserole I had made ASAP so I thought I’d pop in today to share it with you as well!

Originally, I was going to make my Egg Strata recipe but then decided to tweak the recipe and make something a little more spring-y. This Lemon-Blueberry French Toast Casserole is what resulted! šŸ™‚

Lemon-Blueberry French Toast Casserole
Serves 12
An easy Easter breakfast that will please the whole family!

For the Casserole
  1. 1 large loaf Challah bread
  2. 10 large eggs
  3. 2 cups of whole milk
  4. Juice & zest of 1 lemon
  5. 1/2 cup ricotta cheese
  6. 2 cups fresh blueberries
  7. 1 1/2 teaspoons vanilla extract
  8. 3/4 teaspoon cinnamon
For the Icing
  1. 1 cup powdered sugar
  2. 1-2 TBSP lemon juice
For the Casserole
  1. Lightly spray a 9Ɨ13 inch pan with cooking spray.
  2. Cut the crust off of the bread and cut into 1-inch cubes. Spread half of the cubes evenly in the pan.
  3. Top bread with half of the blueberries
  4. Repeat the layers once more.
  5. In a large bowl, whisk together eggs, milk, ricotta cheese, cinnamon, vanilla extract, lemon juice and lemon extract.
  6. Pour egg mixture over layered ingredients.
  7. (Recommended) Cover with foil and refrigerate overnight.
  8. Bake (uncovered) at 350 degrees for 55-60 minutes.
  9. Drizzle the icing over the casserole and serve warm.
For the Icing
  1. Vigorously mix together the powdered sugar and lemon juice until smooth. If the texture is too thick at a little mix, if it's too thin add more powdered sugar.

And because I forgot to post my training summary yesterday… here’s what my running looked like last week. I really slacked on the weight lifting front but I’m determined to get back at it this week!

Sunday: Rest Day ā€“ Easter Sunday

TOTALS: 22 miles run
